Cashew Cauliflower Fried Rice

A healthy, flavorful alternative to traditional fried rice, this Cashew Cauliflower Fried Rice is made with riced cauliflower, onions, carrots, peppers, peas, edamame and pineapple, flavored with a cashew butter sauce and topped with roasted cashews, avocado and a fried egg for extra protein.

I find myself making cauliflower fried rice quite often. It’s a go-to clean out the fridge type meal. There are lots of different vegetables and proteins that work in this type of dish and it’s quick! Through my throw-it-together dinners I slowly landed on my favorite add-ins and flavoring resulting in this Cashew Cauliflower Fried Rice!

How do you make riced cauliflower?

 

Honestly? I don’t.

Cauliflower rice has become really popular in the last few years. Due to it’s popularity riced cauliflower is readily available at most grocery stores. You can either buy it frozen in the frozen vegetable section or in the refrigerated section of the produce department where the packaged salads and other prepped raw vegetables are. Both options are inexpensive and save you the time and hassle of ricing the cauliflower yourself.

If you have the time and prefer to rice it on your own, it’s pretty simple to make in your food processor from a head of cauliflower. This recipe gives you easy, step-by-step instructions.

Why is Cashew Cauliflower Fried Rice an Easy, Healthy Meal Option?

 

Cashew Cauliflower Fried Rice is a healthified version of your favorite take-out fried rice.

What Makes it Healthy?

 

Swapping cauliflower rice for regular white rice alone makes this a much healthier option than the traditional. Cauliflower is low in calories and high in fiber and vitamin B. Also this recipe uses very little oil, the fat and flavoring comes mainly from the cashew butter sauce. Cashew butter is a good source of protein and healthy fats. In addition in this recipe we top the rice bowls with fresh avocado and a fried egg making it a well rounded meal that is packed with vegetables and high in protein.

What Makes it Easy?

 

There is nothing fancy about this recipe. If you use pre-prepared riced cauliflower (fresh or frozen), the rice bowls come together in less than 30 minutes. You can also add and eliminate vegetables as you see fit. Fried rice, like stir-fry, is a type of recipe that can be left open to interpretation. If you decide, for example, to leave out the red pepper or throw in some kale the end result will still be delicious. It’s an easy weeknight meal that comes together quickly. It also keeps well, I love to eat it as an easy lunch – hot or cold!

A healthy, flavorful alternative to traditional fried rice, this Cashew Cauliflower Fried Rice is made with riced cauliflower, onions, carrots, peppers, peas, edamame and pineapple, flavored with a cashew butter sauce and topped with roasted cashews, avocado and a fried egg for extra protein. 


Ingredients

Scale

1 tbsp coconut oil

1 cup white onion, chopped small

1/2 cup carrots, sliced thin

1/2 cup red bell pepper, sliced thin

1 cup pineapple, diced

2 cloves garlic, crushed

24oz riced cauliflower*

1/4 cup cashew butter

2 tbsp soy sauce

1 tbsp fish sauce

1 tbsp lime juice

2 tsp ginger paste

pinch of salt

1/2 cup frozen peas

1/4 cup frozen edamame

1/2 cup roasted, salted cashew pieces

1 large avocado, sliced

4 large eggs

salt

pepper


Instructions

Heat coconut oil in a large skillet over medium heat

Add the chopped onion, sauté 2-3 minutes

Add the carrots, sauté 2-3 more minutes

Add the red bell pepper and pineapple, sauté 2-3 minutes

Add the garlic, sauté 1-2 minutes

In a small bowl, whisk together the cashew butter, soy sauce, fish sauce, lime juice, ginger paste and salt

Add the riced cauliflower to the skillet

Pour the cashew butter mixture into the skillet, mix and sauté 2-3 minutes

Turn the skillet up to medium-high cook for 2-3 minutes without mixing to brown “fry” the bottom

Add in the peas and edamame, mix

Sauté 2-3 minutes

Divide the fried rice into 4 bowls

Top with cashews and avocado slices

Wipe out the skillet and return to the burner over medium-low heat

Crack the eggs into the skillet, make sure they are not touching, fry the eggs to your liking**

Top each rice bowl with a fried egg

Enjoy immediately***

Notes

*You can use fresh or frozen

**for a runny egg, fry until the white is just set. If you prefer you can omit the egg or scramble it and mix it into the rice.

***The rice keeps well in the refrigerator, store it without the egg and make the egg when you are ready to serve.
