What are you making for him this year?!  Let’s surprise him! Everyone likes surprises! Even Santa!

I asked him and he told me so!

For a few years when I was little we were leaving all sorts of things for everyone in the Santa universe… Santa, the Reindeers, Mrs. Clause, the Elves… no one could be left out! Carrots for the reindeers of course and then one year some sort of magic reindeer dust or something? Something really glittery is all I remember… my poor Mom, haha.

Tips for Making Surprise Kiss Peanut Butter Snowballs

 

Ideally you will want to refrigerate the dough for about 1 hour. If you end up making the dough farther in advance, that’s ok, just take it out about 30 minutes before you want to start making the cookies so it will soften a bit.

Unwrap the kisses prior to starting to work with the dough. Your hands will be a sticky mess and it will be hard to open them as you’re working.

Use clean hands to work the dough and wrap it around the kiss. It takes a little bit of work to get the kiss fully covered inside the dough and the dough rolled into a clean ball. Just keep working it!

The recipe calls to make 24 cookies, that will obviously depend on the size of your cookie balls. They are meant to be just a bit larger than the kiss to make sure it is covered and doesn’t ooze out of the cookie when baked.

Surprise Kiss Peanut Butter Snowballs

Description

These Surprise Kiss Peanut Butter Snowballs are perfect for Santa, a Hershey’s Kiss hidden inside a delicious peanut butter cookie dusted with powdered sugar.


Ingredients

Scale

1/2 cup unsalted butter

1/2 cup creamy peanut butter

3/4 cup white sugar, divided

2 large eggs

1 tsp vanilla extract

2 cups all-purpose flour

1/4 tsp salt

24 Hershey Kisses (dark or milk chocolate), unwrapped

2 tbsp confectioners’ sugar


Instructions

In the bowl of an electric mixer, cream together butter, peanut butter and 1/2 cup sugar until smooth and fluffy, 2-3 minutes

Add eggs 1 at a time

Add vanilla extract, mix

Slowly add flour and salt, mix until fully combined

Refrigerate dough at least 1 hour

Pre-heat oven to 375Β°F

With clean hands work the dough and form it around each kiss, roll into a ball, you should not be able to see any part of the kiss

Pour the remaining 1/4 cup sugar into a small bowl

Roll the dough balls in the sugar to coat

Place the kiss wrapped, sugar coated dough balls on 2 parchment lined baking sheet (12 cookies on each sheet)

Bake 12-15 minutes

Transfer cookies to a cooling rack

Sprinkle with powdered sugar

Notes

Best if eaten within 3-4 days, can keep frozen up to 2 months
