Can you believe that February is almost over already?! Today is the last day of the Thai Cooking at Home Series and naturally we’re finishing it off with dessert! 

Dessert is not big in Thailand, more touristy places will have it on their menus for the sake of Westerners, but generally they do not eat a dessert course to finish out a meal. They eat Mango Sticky Rice and other Thai sweets more as a sweet treat or snack that can be had any time of day. 

Traditionally the rice is soaked in water or coconut milk before being steamed in a rice cooker. With this Instant Pot Mango Sticky Rice we get to cheat a little! By using the high pressure cooking setting on the Instant Pot we can skip the rice soaking step and make Mango Sticky Rice any time the mood strikes!

Ingredients for Mango Sticky Rice 

 

Glutenous Sweet Rice – The key ingredient is this very sticky, sweet rice. 

Coconut Milk – Used to cook the rice in and as the base for the coconut sauce. 

Water – for cooking the rice 

Palm Sugar – Used both to sweeten the rice and the coconut sauce, you can substitute with white sugar if you don’t have palm sugar. 

Ripe Mango – Mango Sticky Rice is usually eaten during peak mango season, the riper the mango, the sweeter it will be! 

Black Sesame Seeds – for optional garnish 

 

How to Make Instant Pot Mango Sticky Rice

 

Because we get to skip the rice soaking, we can get straight to making the rice in the Instant Pot

Add the rice, water and coconut milk to the pot, turn it on “pressure cook – high” and cook for 12 minutes. 

While the rice is cooking, make the coconut sauce. It is a simple sauce made with coconut milk and sugar. Heat the coconut milk over medium heat in a heavy-bottomed sauce pan and bring to a boil. Add the sugar and stir until it is dissolved. Reduce the heat to a low simmer and allow the sauce to thicken. 

When the rice is done the Instant Pot will beep, at this point you can either use the valve to quick release the pressure (careful, the steam is hot!) or you can naturally release it. 

When it is safe to do so, remove the lid and fluff the rice with a fork. Scoop the rice onto a plate or into a bowl for serving. 

Pour the coconut sauce over the rice and top with mango and a sprinkle of sesame seeds!

Ingredients

Rice

1 cup glutinous sweet rice

1/2 cup water

1 cup coconut milk

1 tbsp palm sugar*

Sauce

1 cup coconut milk

5 tbsp palm sugar*

Toppings

1 ripe mango, sliced

black sesame seeds


Instructions

Rice

Rinse and strain rice until water runs clear**

Add the rice to the Instant Pot 

Pour in the water and coconut milk

Add the sugar, mix with a wooden spoon

Lock the lid in place and set the pressure value to “sealing”

Turn Instant Pot to “pressure cook – high” and set for 12 minutes

When Instant Pot beeps that it is done you may either let the pressure naturally release or quick release the pressure

When it is safe to do so, remove the lid

Fluff the rice with a fork

Scoop rice into bowls or onto plates, serve warm

Sauce

While the rice is cooking make the sauce

Add the coconut milk to a small, heavy bottomed sauce pan over medium heat

Bring to a boil

Add the sugar, boil until sugar is dissolved, mixing with a wooden spoon so it does not burn

Reduce to simmer, sauce will thicken

When the rice is ready and plated, pour sauce over rice

Toppings

Top the sticky rice with mango slices and a sprinkle of sesame seeds


Notes

*Can substitute with white sugar

**since we are using the Instant Pot to cook the rice, no need to let it soak
