Overnight Peaches And Cream French Toast

Have weekend brunch plans? I have just the recipe for you! This Overnight Peaches & Cream French Toast is perfect for summer and easy on the host! You can prep it the night before and pop it in the oven about an hour before your guests arrive for a dish that is sure to please! 

Remember how I told you I had 2 spontaneous bread purchases last week at Trader Joe’s?! Here’s the other one! It’s their Sliced French Brioche and it is to die for! I could pretty much tell just by holding it in my hands that it was going to be the best french toast bread ever. My confidence was boosted when the crew member at the register asked if I had tried it and when I said I hadn’t he said “you are in for a treat”. I’ve found that when a Trader Joe’s crew member offers their approval the product is nearly always a winner. So I was pretty psyched to get home and make this Overnight Peaches & Cream French Toast! 

 This bread was born to be French Toast. It’s rich and buttery and  perfectly sponge-like  allowing it to transform from brioche to french toast overnight ๐Ÿ™‚ 

Another reason to make this Overnight Peaches & Cream French Toast RIGHT NOW is that peaches came into season early this year and you don’t want to miss out! Peaches are emblematic of summer time and when you eat this french toast you feel sweet summertime running through your veins ๐Ÿ™‚ 

 

Walter is a big french toast fan. It’s his favorite breakfast food. He’s normally not a tough food critic, but when it comes to french toast he has high expectations and can be a bit picky. He gave this recipe 2 thumbs up so I know it has to be good ๐Ÿ™‚

Overnight Peaches & Cream French Toast

Ingredients

  • French Toast!
  • 7 slices French Brioche Bread*
  • 2 peaches, pitted and chopped
  • 4 eggs
  • 1/2 cup peach nectar
  • 1/2 cup cream of coconut
  • 1 cup milk**
  • 1 tsp vanilla extract
  • 1/8 tsp sea salt
  • Topping!
  • 1/3 cup flour
  • 3/4 brown sugar
  • 2 tbsp coconut oil, melted

Instructions

  1. Grease a shallow 9X13″ baking pan
  2. Lay bread in a single layer covering the full bottom of the pan (you will have to slice one of the pieces to fill in the holes)
  3. In your food processor, add all remaining ingredients, puree on high until smooth
  4. Pour mixture over bread***
  5. Cover and place in refrigerator overnight
  6. The next morning pre-heat the oven to 350ยฐ F degrees
  7. Mix together the flour, brown sugar and coconut oil
  8. Take the fresh toast out of the fridge
  9. Sprinkle the topping over the french toast
  10. Put the baking dish in the oven and bake for 35-45 minutes (35-40 if you like your french toast gooey, 40-45 if you like it a little firmer)
  11. Remove from oven
  12. Best if enjoyed warm with whipped cream and maple peach compote****

Notes

* Trader Joe’s Sliced French Brioche is my recommendation
**Any milk of your choosing
***It will look like the bread is drowning, this is good
****Maple Peach Compote: In a small sauce pan, heat 1/2 cup maple syrup over low heat, add 1 chopped up peach, cook, stirring occasionally until the peach is soft
