Pear and Pomegranate Christmas Salad

Description

A winter salad packed with pear, pomegranate seeds, blue cheese, onion, dried cranberries and toasted pine nuts this Pear and Pomegranate¬†Christmas Salad is great on it’s own or as a compliment to a larger meal.¬†


Ingredients

Maple Vinaigrette

1/3 cup olive oil

1/3 cup maple syrup

1/2 cup apple cider vinegar

1/2 tsp sea salt

Toasted Pine Nuts

1 tbsp olive oil

2 tbsp pine nuts

Pear and Pomegranate Salad

1 5oz package baby kale mix*

1 cup pear, chopped**

1/2 cup pomegranate seeds

1/4 cup white onion, chopped

1/4 cup blue cheese crumbles

2 tbsp dried cranberries

2 tbsp toasted pine nuts


Instructions

Maple Vinaigrette

In a jar with a tight lid, add all of the vinaigrette ingredients, shake until well combined

Toasted Pine Nuts

Heat the olive oil over medium heat in a small skillet

Add pine nuts

Constantly tossing to make sure they do not burn, toast the pine nuts until golden brown, 2-3 minutes

Remove from heat, using a slotted spoon move pine nuts to a paper towel, cool

Pear and Pomegranate Salad

In a large salad bowl, add all of the salad ingredients and toss

Drizzle with desired amount of maple vinaigrette, toss

Serve immediately
