Sausage Egg and Cheese Breakfast Sandwiches

These Sausage Egg and Cheese Breakfast Sandwiches are the perfect breakfast treat! An english muffin stacked with an egg, cheese, tomato, avocado, sausage and a topped off with a special sauce! 

These Sausage, Egg and Cheese Breakfast Sandwiches are more affectionately known as “quarantine breakfast sandwiches” in our house. In normal life, we frequent a local farmer’s market on Saturday mornings. Our favorite treat at the market is an amazing breakfast sandwich from one of the farm stands. The line is always long (a sure sign of a good thing), but absolutely worth the wait. Just thinking about it has me drooling! 

A few weeks after the stay-at-home orders were put in place back in March, we started to really miss our Saturday morning breakfast sandwich tradition. I got to work trying to recreate our beloved breakfast sandwich and while nothing can quite replace it, this sandwich comes pretty darn close!

How to make the best sausage, egg and cheese

 

There are several keys to making a great sausage, egg and cheese. Let’s take a closer look at each ingredient: 

 

English Muffin – your bread choice is important, an english muffin is perfect because of it’s round shape and just the right size for breakfast. It’s also thin enough that it doesn’t take aways from the sandwich with too much bread. 

Sausage – You will want to use a round sausage patty. I find that most brands are a little too thick and not quite wide enough to fit well on the english muffin. So I take an extra few minutes to flatten the patties before cooking, you want them just about the size of the english muffin because they will shrink some when cooked. 

Egg – I call the method for making the eggs “foldy” eggs. I realize foldy is not a real word, but it’s the best way to describe how you make them. You do a quick whisk of the egg and then pour it into the skillet, it will expand some and cook very quickly. Use a spatula to fold the egg into a square and then give it a quick flip. It’s a quick way to make a layer of egg that fits well on the sandwich.

Cheese – You can use any type of sliced cheese you like. Make sure it is something that melts easily. I have made them with different types of cheese, I think they are best with some type of sharp cheddar. 

Special Sauce – Other than being farm fresh the reason we love the farmer’s market breakfast sandwich so much is because it comes with the most amazing sauce! I know for certain I haven’t quite replicated the sauce, but a mixture of ketchup and mayo comes pretty close. It’s really simple and sounds kind of gross, but trust me it’s so delicious and will take your breakfast sandwich to the next level! 

Other Additions – I think a sausage, egg and cheese can totally stand alone, but I often like to add a slice of fresh tomato and a few thin slices of avocado. Adding some veggies in with your breakfast is always a good idea, right?

Sausage Egg and Cheese Breakfast Sandwiches for Two

Description

These Sausage, Egg and Cheese Breakfast Sandwiches are the perfect breakfast treat! An english muffin stacked with an egg, cheese, tomato, avocado, sausage and a topped off with a special sauce! 


Ingredients

Scale

2 round breakfast sausage patties

2 large eggs

salt

black pepper

2 english muffins, sliced

2 slices cheese*

2 tbsp ketchup

1 tbsp mayo

2 slices tomato

1/2 small avocado, sliced


Instructions

Heat an electric skillet to 275°F**

Using clean hands, press the sausage patties between your hands to make them wider and thinner while keeping their wide shape, you want them to be about the width of the english muffin

Add the sausage patties to the skillet, cook for 3-4 minutes

While the sausage is cooking, crack the eggs into 2 separate small bowls, give them a quick scramble with a whisk and add a dash or salt and pepper

Flip the sausages

Pour in the eggs 1 at a time, make sure they have room to spread without hitting each other or the sausages

The eggs will cook quickly, use a spatula to fold them into a square and then flip

Remove the cooked sausages and eggs and set aside

The sausage will have left some grease, place the english muffin halves face down in the grease to toast all 4 halves, toast 3-4 minutes, remove the top halves

Flip the bottom halves and top each with a folded egg

Place a slice of cheese on top of each egg

Cover the skillet with the lid to let the cheese melt, 2-3 minutes

While the cheese is melting, in a small bowl mix together the ketchup and mayo, set aside

Remove the sandwich bottoms from the skillet, top each with a slice of tomato and a few slices of avocado

Lay the sausage on top of the avocado

Top the sausage with a generous amount of the sauce

Place the english muffin top on top of the sausage to close the sandwich

Enjoy immediately

Notes

*use whatever type of cheese you like, make sure it is sliced and melts well – personally I like a sharp cheddar

**you can also use a large skillet on the stove-top over medium heat
