Oatmeal Cookie Date Balls

Description

These Easy Oatmeal Cookie Date Balls are a simple snack, quick breakfast or healthy dessert option! They are made with oats, raw almonds, dates, almond butter and honey and flavored to taste like an oatmeal cookie! 


Ingredients

Scale

1 cup old fashioned rolled oats

1/2 cup whole, raw almonds

8 whole dates, pitted

1/3 cup almond butter

1 tbsp honey

1 tsp vanilla extract

1 tsp cinnamon

dash of nutmeg

dash of salt

1/2 cup raisins


Instructions

Add the oats, almonds and dates to the bowl of your food processor

Process on high for about 3 minutes until everything is finely chopped

Add the almond butter and honey

Process on high for about 2 more minutes until the mixture starts to come together

Add the vanilla extract, cinnamon, nutmeg and salt, pulse to fully combine

Add the raisins and pulse until they are chopped small, but so you can still see pieces

Prepare a baking sheet with parchment paper

Using clean hands, form the mixture into balls about 1-inch in diameter and set on the baking sheet*

Once you have formed all of the mixture into balls put the tray in the refrigerator for at least 20 minutes

After 20 minutes you can pack them into an airtight container or plastic bag to store

The date balls will keep fresh 2-3 weeks if kept refrigerated**

Notes

*They are ready to eat at this point, but if you plan to store them continue to the next step

**They will keep much longer than 2-3 weeks, they just lose some of their freshness beyond the 3 week mark
