Banana Chia Chocolate Breakfast Cookies

  • 2 large ripe bananas
  • 2 cups quick cook oats
  • 2 tbsp chia seeds
  • 1 egg
  • 2 tbsp coconut oil, melted
  • 1 tbsp honey
  • 1/2 cup dark chocolate chips (optional)


  1. Preheat oven to 350°F
  2. Prep a baking sheet
  3. In a medium sized mixing bowl, mash the bananas
  4. Mix in oats and chia seeds
  5. Add the egg, mix until fully combined
  6. Add the coconut oil and honey, mix
  7. Fold in chocolate chips if desired
  8. Form into large, round cookies and place on baking sheet
  9. Bake for 12-14 minutes
  10. Cool
  11. Cookies keep up to 1 week in the fridge and 2 months in the freezer
