Dog Friendly Carrot Cake

Description

Treat your furry friends to a special treat on their special day! This Dog Friendly Carrot Cake is made with a few simple, dog-friendly ingredients your pup is sure to love! 


Ingredients

Scale

Carrot Cake

2 cups old fashioned oats*

1 tsp baking powder

dash of cinnamon (optional)

1/2 cup grated carrots

1/2 cup full fat, plain greek yogurt

1/2 cup milk**

2 large eggs

2 tbsp olive oil

1 tbsp honey

Cream Cheese Frosting

4oz cream cheese

1/2 cup full fat, plain greek yogurt

2 tbsp heavy whipping cream

1 tbsp honey (optional)

dog treat (for decoration)


Instructions

Preheat oven to 350°F

Grease two 5-inch cake pans with non-stick cooking spray, set aside

Add the oats to the bowl of your food processor, process on high until oats are a fine, flour-like consistency

Add the baking powder and cinnamon (if you are using it), pulse to combine

Add the carrots, greek yogurt, milk, eggs, olive oil and honey, process on high until everything is fully combined

Split the cake mixture evenly between the 2 cake pans, it will not even fill the pan half way (the cake layers are meant to be thin)

Place the cakes in the oven and bake for about 18 minutes until the cake is set in the middle and cooked through

Remove from oven and cool completely before frosting

Cream Cheese Frosting

Add all the ingredients for the frosting (except the dog treat) to the bowl of an electric mixer fitted with whisk attachment

Beat on high for 3-5 minutes until the frosting is smooth and has a whipped-like consistency

Set one layer of the cooled cake onto a serving plate

Top that layer with half of the frosting (don’t frost the sides)

Place the second layer on top of the frosting

Top with remaining frosting (don’t frost the sides)

Decorate with a dog treat if you wish

Notes

*You can use oat flour and mix the cake in a bowl if you have it on hand

**I used oat milk, any kind of milk will do
