Gingerbread Waffles

Ingredients

  • 2 cups white all-purpose flour
  • 1/4 cup brown sugar
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1.5 tsp cinnamon
  • 3 tsp ginger
  • 1/4 tsp nutmeg
  • 1/4 tsp ground cloves
  • 4 eggs
  • 1/3 cup coconut oil, melted
  • 1/2 cup sour cream
  • 1/4 cup molasses

Instructions

  1. In a large bowl whisk together flour, brown sugar, baking powder, baking soda, salt, cinnamon, ginger, nutmeg and ground cloves
  2. In a small bowl, beat the eggs, add melted and cooled coconut oil, sour cream and molasses
  3. Pour the wet ingredients into the dry, mix until fully combined
  4. Heat waffle iron
  5. Spray with non-stick spray
  6. Fill waffle iron with batter according to manufacturer’s instructions
  7. Cook until browned, crisp and cooked through
  8. Repeat with remaining batter
  9. Serve hot with maple syrup and whipped cream, if desired
