Loaded Banana Zucchini Bread

Ingredients

  • 3 ripe bananas
  • 1/4 cup melted coconut oil
  • 1/2 cup white sugar
  • 1 tsp vanilla extract
  • 1 egg
  • 1 cup grated zucchini
  • 1 1/4 cup white all-purpose flour
  • 1/2 tsp baking soda
  • 1/4 tsp sea salt
  • 1/2 cup + 1 tbsp chopped walnuts
  • 1/2 cup + 1 tbsp chocolate chunks

Instructions

  1. Pre-heat oven to 350°F
  2. In a large bowl, mash the bananas (using a fork or potato masher)
  3. Add melted coconut oil, white sugar and vanilla extract, mix with a spoon until fully combined
  4. Mix in egg
  5. Fold in zucchini
  6. In a small bowl whisk together flour, baking soda and sea salt
  7. Slowly add dry mixture to wet, mixing as you add
  8. Fold in 1/2 cup walnuts and 1/2 cup chocolate chunks
  9. Grease 2 mini-loaf pans or 1 regular sized loaf pan
  10. Add mixture to pan(s)
  11. Sprinkle with remaining walnuts and chocolate chunks
  12. Bake for 25 minutes for the small loafs or 40-45 minutes for the regular sized loaf
