Fresh Dill Salmon Salad

Description

This Fresh Dill Salmon Salad is loaded with flavor! The salmon is cooked in lemon giving it a delicious, refreshing flavor that compliments the capers, red onion and fresh dill! 


Ingredients

Scale

Salmon

1 pound fresh salmon

1/2 tsp salt

1 lemon

Salmon Salad

Cooked salmon, shredded

1/4 cup red onion, chopped small

2 tbsp capers

2 tbsp fresh dill, chopped

1/4 cup mayonnaise

2 tsp dijon mustard

2 tbsp lemon juice

1 tsp salt

1/2 tsp coriander


Instructions

Salmon*

Preheat oven to 450°F

Line a baking sheet with aluminum foil

Pat salmon filet dry

Sprinkles with salt

Place filet on the baking sheet

Squeeze the lemon over the salmon

Bake for 10-12 minutes

Remove from oven, cool

When the salmon is cool, use a fork to shred it

Salmon Salad

Add the shredded salmon to a large bowl

Add onions, capers and dill, toss

In a small bowl, mix together the mayonnaise, mustard, lemon juice, salt and coriander

Add the mayonnaise mixture to the salmon mixture, mix

Store in an air tight container in the refrigerator up to 5 days

Notes

*You can use canned salmon, it does not taste as fresh, but it still works with the recipe. Use 4, 5oz cans drained.
