Watermelon, Beet & Barley Salad

Ingredients

  • 2 cups watermelon, cut into 1 inch cubes
  • 1 cup roasted beets, cut into 1 inch cubes
  • 1 cup cooked barley
  • 1 tbsp lemon juice
  • 2 tbsp olive oil
  • 1/4 tsp sea salt
  • 2 tbsps fresh mint
  • 1/2 cup feta cheese

Instructions

  1. In a medium sized bowl mix together watermelon, beets and barley
  2. In a small bowl whisk together lemon juice, olive oil and sea salt
  3. Pour olive oil mixture over watermelon mixture, toss
  4. Add half of the mint and half of the feta, mix
  5. Refrigerate salad and let marinate for at least 3 hours before serving
  6. Serve and top with remaining mix mint and feta
