Simple Kneaded Irish Soda Bread

Kneaded by hand, this Simple Kneaded Irish Soda Bread is sweet and dry.


Ingredients

Scale
  • 3.5 cups flour
  • 1 cup sugar
  • 1 tsp baking powder
  • 2 tsp baking soda
  • 1 cup raisins
  • 1 tbs caraway seeds (optional)
  • 1 cup buttermilk
  • 1 egg
  • 2 tbsp vegetable oil
  • 1 tbsp pearl sugar (optional)

Instructions

  1. Pre-heat oven to 350 degrees
  2. Line a baking sheet with parchment paper
  3. In a large bowl mix together 3 cups of flour, sugar, baking powder and baking soda
  4. Add raisins and caraway seeds (optional), set aside
  5. In a small bowl whisk together the buttermilk, egg and vegetable oil
  6. Make a well in the dry ingredient mixture and pour in the wet ingredients
  7. Mix as well as you can with a spoon
  8. Sprinkle some of the reserved 1/2 cup flour onto a clean, dry surface
  9. Place dough on the flour
  10. Sprinkle dough with some more flour
  11. Knead dough for about 5 minutes, adding flour as needed, until dough is no longer sticky
  12. Form dough into a smooth mound and place on baking sheet
  13. Cut a cross on the top of the loaf with a knife
  14. Sprinkle with pearl sugar (optional)
  15. Bake for 40-50 minutes
  16. Bread is done when slightly browned on the top and knife comes out dry
  17. Use serrated knife to slice bread, it should be hard
