Carrot Cake Energy Balls

  • 8 medjool dates
  • 1 cup oats
  • 1 cup shredded carrots
  • 2 tbs shredded coconut (sweetened or unsweetened)
  • 3 tbs agave
  • 1 tsp cinnamon
  • 1/4 tsp ground ginger
  • 2 tbs raisins (optional)
  • 2 tbs dark chocolate chips (optional)
  • 1 cup sweetened shredded coconut


  1. Half and pit the dates
  2. Add dates to the bowl of a food processor
  3. Process on high until dates are broken down into small pieces
  4. Add oats, carrots, coconut, agave, cinnamon and ginger
  5. Process on high
  6. Add raisins and dark chocolate chips (optional), pulse until chopped to desired consistency
  7. Dump mixture onto cutting board and form into a ball using your hands
  8. Pour sweetened coconut onto cutting board (you will not use it all)
  9. Roll mixture into golf ball sized balls and roll in coconut to coat
  10. Store in refrigerator
