Fig and Prosciutto Sandwiches with Honey Gorgonzola Spread

Description

It’s a cheeseboard in a sandwich! The most delicious summertime sandwich made with fresh figs, prosciutto, arugula and a homemade honey gorgonzola spread!

Ingredients

Honey Gorgonzola Spread

3/4 cup gorgonzola cheese

2 tbsp honey

1 tsp lemon juice

1/4 tsp sea salt

Sandwiches

4 slices bread*

5oz prosciutto

6 ripe figs

1 cup arugula


Instructions

Honey Gorgonzola Spread

In the bowl of your food processor add all of the ingredients for the spread

Turn it on high and blend until smooth

Sandwiches

Spread the honey gorgonzola spread generously on one side of all 4 slices of bread

Slice the figs into flat 1/8″ slices, place them in a single layer on one slice of bread from each pair

Roll each slice of prosciutto and  place 5-6 rolls on top of the figs on both pieces of bread

Top each with 1/2 cup arugula

Place the other slice of bread on top of each sandwich, slice in half

Enjoy immediately


Notes

*I used whole wheat sourdough, use something that isn’t going to fall apart
