It’s a cheeseboard in a sandwich! These Fig and Prosciutto Sandwiches are the most delicious summertime sandwiches made with fresh figs, prosciutto, arugula and a homemade honey gorgonzola spread!
We are slowly creeping into prime fig season and I couldn’t be more excited! Nothing beats a perfectly ripe, sweet, fresh fig 🙂
This Fig & Prosciutto Sandwich with Honey Gorgonzola Spread is like a cheeseboard stuffed into a sandwich. I mean… how could you not love that!? We’ve got the cheese and honey in the spread, the meat, the bread and the figs to round it out! When I think about my dream cheese board all of those items must be included. I’d love to pack up these sandwiches and take them vineyard hoping. Who wants to come with me!?
This sandwich is really simple, it may look fancy, but there is nothing fancy about the preparation! Pick out your favorite, sturdy bread. I used a whole wheat sourdough which held up really well and tasted delicious!
THIS Honey Gorgonzola Spread really makes the sandwich! Its so easy to make with just 4 ingredients – gorgonzola cheese, honey, lemon juice and a little bit of salt! Throw all of the ingredients into your food processor, blend until smooth and it’s ready to spread!
For best results you want to make sure your figs are really ripe and sweet. The sweetness of the fig pairs really well with the saltiness of the prosciutto.
Pro party tip – make these sandwiches open faced and cut into small bite sized pieces as a unique and delicious appetizer!
