Overnight Blueberry Crumble French Toast

This Overnight Blueberry Crumble French Toast is an easy, make-ahead summer breakfast casserole. Gooey french toast packed full of fresh blueberries and topped with an irresistible brown sugar crumb topping! 

This Overnight Blueberry Crumble French Toast will not disappoint! From the buttery brioche and bursting blueberries to the sweet and crunchy crumb topping, it’s made to please a crowd. It’s packed with so many blueberries, you are sure to get at least one in every bite. 

HOW TO MAKE OVERNIGHT BLUEBERRY CRUMBLE FRENCH TOAST 

 

The secret to great french toast is in the bread. I love brioche because it’s the perfect amount of sweet and buttery, making it perfect for french toast! Cut the brioche into cubes and add it to a big mixing bowl. Then add a full pint of fresh blueberries and mix it together with the brioche. The bigger and sweeter the blueberries the better! 

Next, whisk together, eggs, milk vanilla and salt. Pour the egg mixture over the bread and blueberries and mix until all the bread is saturated. Transfer the mixture to a greased baking dish. Cover the dish and put it in the refrigerator overnight. This allows time for the bread time to soak up the creamy egg mixture.

The next morning, take the french toast out of the fridge. Then preheat the oven while you make the crumble topping. The topping is made with flour, oats, brown sugar and softened butter. Combine the flour, oats and brown sugar in a small bowl, then add the soften butter, use a fork to mix until the butter is fully incorporated. Sprinkle the crumble evenly over the french toast. Put the casserole in the oven to bake for about 35 minutes. 

Let set for about 5 minutes and then serve the french toast warm. It’s delicious on it’s own or with some warm maple syrup!

Ingredients

Blueberry French Toast

1 loaf brioche bread

1 pint blueberries

2 cups whole milk

6 eggs

1 tsp vanilla extract

pinch of salt

Crumble Topping

1/4 cup white all-purpose flour

1/3 cup rolled oats

2/3 cup brown sugar

4 tbsp unsalted butter, soft but not melted

pinch of salt


Instructions

Blueberry French Toast

Slice the bread into cubes

Add the bread and the blueberries to a large bowl

In a small bowl whisk together the milk, eggs, vanilla extract and salt

Pour the egg mixture over the bread and blueberries in the large bowl, mix until all the bread is saturated

Spray an 8 1/2″ X 11″ baking dish with non-stick spray

Transfer the bread mixture to the baking dish

Cover and place in the refrigerator overnight*

In the morning, take the french toast out of the refrigerator

Pre-heat oven to 350°F

In a small bowl add the flour, oats, brown sugar and salt, mix to combine

Add the butter and use a fork to incorporate it with the sugar mixture

Using clean hands, crumble the mixture evenly over top of the french toast

Bake for 35-40 minutes**

Let set 5 minutes before serving with maple syrup

Notes

*overnight is best, but a minimum of 4 hours will work

**the longer you bake the drier the french toast will be, so adjust time depending on how “gooey” you like your french toast

  1. LOVED this – what a great dish to serve! THIS WAS SO TASTY. EVERYONE LOVED IT. NOT TOO SWEET, EASY TO MAKE AHEAD OF TIME AND LET THE OVEN DO THE WORK ON THE MORNING YOU WANT TO EAT IT. I added a cinnamon/brown sugar topping. Definitely in the rotation and highly recommend.
