Take boring old chicken salad and make it SUMMER by adding curry and mango for a sweet and flavorful twist on a classic. I am currently obsessed with this chicken salad. It has so much flavor and interest, it keeps me coming back for more. The fresh chunks of sweet and juicy mango pair perfectly with the curry honey mayo sauce that ties the salad together!
What kind of chicken should I use?
I’m all about convenience right now, so lately I’ve been using rotisserie chicken for chicken salad. It’s flavorful and lends itself well to chicken salad because it’s moist and has a lot of flavor in and of itself. The best part… it’s already cooked and ready to go, all you have to do is shred it!
Another option that is packed with flavor are chicken thighs. They are moist and easy to shred. Bake them, sear them in a pan, cook them in the air fryer or even on the grill!
Finally, you can also, of course, use chicken breasts prepared any of the same ways you could prep the chicken thighs.
What goes into Mango Chicken Salad
Chicken is obviously the base, so now that we have that part covered there are the add-ins and the sauce.

Mayonnaise (or substitute plain greek yogurt)
Apple Cider Vinegar
How to Serve Mango Curry Chicken Salad
Here are some of my favorite ways to serve this chicken salad recipe. Which every way you choose to serve it, I recommend always serving it chilled:
- On a fresh, croissant (as pictured) – it’s a little decadent – definitely a treat, but tastes delicious served this way!
- On bread or in a wrap – add some greens to lighten it up an add some extra crunch!
- Over a bed of greens as a satisfying salad!
- As a dip with crackers – I love it with Wheat Thins or Triscuit Crackers, but any strong cracker than can handily a hearty dip will do!

4 cups cooked shredded chicken*
1 cup mango, cubed
1/2 cup celery, diced small
1/2 cup green apple, chopped small
1/4 cup red onion, sliced thin
1/4 cup walnut pieces
2 tbsp raisins
2 tbsp dried cranberries
3/4 cup mayonnaise
2 tbsp curry powder
1 tbsp honey
1 tsp ground coriander
1 tsp turmeric
1 tsp apple cider vinegar
In a large bowl combine the chicken, mango, celery, apple, onion, walnuts, raisins and cranberries
In a small bowl, whisk together the mayo, curry powder, coriander, turmeric and apple cider vinegar
Add the mayo mixture to the chicken salad mixture, mix to fully combine
Serve chilled on croissants, if desired.
*can use rotisserie chicken, shredded chicken thighs or shredded chicken breasts
