Everything but the Bagel Chicken Salad

This Everything but the Bagel Chicken Salad is so easy to prep ahead! It makes a perfect weekday lunch to pack on the go or quickly throw together at home. Serve on top of greens, in a sandwich or on it’s own! 

Do you meal prep on Sundays? I really try to, but sometimes it just doesn’t happen. I totally think Sunday meal prep is a great habit and makes for a much easier week. But, I also think there is a lot of pressure going around to meal prep on Sunday’s when sometimes it’s not an options, or heck, you just don’t feel like it and that is OK too!

This Everything but the Bagel Chicken Salad is a great Sunday meal prep idea — however, it comes together so fast you could prep it any night of the week, it’s not exclusive to Sundays. Also, the chicken obviously needs to be baked first (or you could cheat a little and use a rotisserie chicken — um, hello yum!) so maybe on Sunday you just bake the chicken. Prepping elements of dishes to have for the week, but not actually assembling anything takes some of the pressure off the Sunday meal prep, but still sets you up nicely for the week.

By this point, if you are a regular blog reader you know that I am a little obsessed with Trader Joe’s. But this week I started thinking, “Is it worth it?”, “Am I just buying frivolous things I don’t need?”… there may potentially be truth in those questions, however… I came to the conclusion that it IS worth it because it adds an element of excitement to my pantry, fridge… life, haha! (You know you are old and boring when Trader Joe’s brings you that much excitement, haha). But for real, this Everything but the Bagel seasoning is so different from anything I could find in a “normal” grocery store. Sure, I could probably put this spice mix together on my own… but why go to the trouble when they are going to do it for me, package it up all cute and give it a witty name? Part of the appeal of going into Trader Joe’s is there are always new things to discover and you can find exciting gems like this!

I kept it pretty classic with the chicken salad add-ins here, walnuts, celery, onions and dried cranberries rounded out the mix. The Everything but the Bagel seasoning takes it to the next level, all the spices work so well together you really don’t need any other flavoring. The “mayo” is actually greek yogurt, which sometimes can get watery in salads like this, but the chicken really absorbs it so you wouldn’t even be able to tell it’s not mayo. Since I often eat this for lunch I like to use greek yogurt to try to make it a healthy option.

So, prep this chicken salad, whenever you get a chance! It’s too easy not too and too delicious to skip!

Everything Bagel Chicken Salad

Description

This Everything but the Bagel Chicken Salad is so easy to prep ahead! It makes a perfect weekday lunch to pack on the go or quickly throw together at home. Serve on top of greens, in a sandwich or on it’s own! 


Ingredients

Scale

4 large chicken breasts, baked

1 cup raw walnut pieces

1 cup red grapes, halved

1/2 cup dried cranberries

1/2 cup celery, chopped

1/3 cup red onion, diced

1 cup plain greek yogurt

1/2 tsp sea salt

1 tbsp Everything But The Bagel Seasoning


Instructions

Cut the chicken breasts into small cubes, toss into a large bowl

Add the walnuts, grapes, cranberries, celery and onion

In a small bowl, mix together the greek yogurt, sea salt and Everything But The Bagel Seasoning

Add the greek yogurt mixture to the large bowl and toss to coat evenly

For best results make 8 hours before serving to let salad marinate

Keep refrigerated for up to 5 days

    Laura changed my life when she suggested putting Bagel seasoning in chicken salad. *love* this recipe. I omit the red onions because i cant handle them, but otherwise it is fantastic!!
