Start off with a loaf of brioche bread – it’s thick and buttery and makes the best french toast! Cut it into cubes and add it to a greased baking dish. The bread should almost fill the dish, leaving just a little room at the top for the topping. 

Next, blend together ripe, juicy peaches, eggs, milk, vanilla and salt. This is what will transform that delicious brioche into decadent french toast! Pour the mixture over the bread to soak. Cover the casserole dish and put it in the refrigerator overnight. This gives the bread time to soak up the creamy egg mixture and transform it into a gooey french toast casserole that is to die for! 

In the morning preheat the oven while you make the crumb topping. The topping is just flour, brown sugar and softened butter. Combine those 3 ingredients together to make a crumble and then sprinkle it all over the top of the casserole. Put the casserole in the oven to bake for about 35 minutes. 

While the french toast is baking you can quickly whip up the 2 toppings – Peach Maple Compote and Homemade Whipped Cream. Once the french toast is done let it rest for 5-10 minutes and then serve it warm with both toppings!

Ingredients

Scale

French Toast

7 cups brioche bread, cut into cubes

1 cup ripe peaches, pitted and chopped

5 eggs

2 cups whole milk

1 tsp vanilla extract

1/8 tsp salt

1/4 cup white all-purpose flour

2/3 cup brown sugar

3 tbsp butter, softened

Peach Maple Compote

1/2 cup maple syrup

1 ripe peach, pitted and chopped

Whipped Cream

1 cup heavy whipping cream, cold

2 tbsp white sugar

1 tsp vanilla extract


Instructions

French Toast

Grease a 8 1/2″ X 11″ baking dish

Fill the dish with the brioche bread cubes

In a food processor or blender, add the peaches, eggs, milk, vanilla extract and salt, blend until smooth

Pour mixture over the bread

Cover and place in refrigerator overnight

The next day preheat the oven to 350° F degrees

Take the french toast out of the refrigerator

In a small bowl, mix together the flour, brown sugar and softened butter

Sprinkle the topping over the french toast

Put the french toast in the oven and bake for about 35 minutes

Remove from oven and let rest for 5-10 minutes before serving

Peach Maple Compote

Add the maple syrup and peaches to a small, heavy bottomed sauce pan

Bring the mixture to a rolling boil over medium-high heat

Reduce to low and simmer for about 10 minutes until the peaches soften and the mixture thickens

Serve the compote warm over the french toast

Whipped Cream

Using an electric stand mixer, start with a cold stainless steal mixing bowl and whisk attachment

Pour the heavy cream into the mixing bowl and whisk on high

When the cream starts to thicken, slowly add the sugar and vanilla extract

Continue to whip until the whipped cream is your desired thickness

Serve on top of french toast
