Who can resist that unique, crispety, crunchety, peanut-buttery texture of a Butterfinger?! Butterfinger were one of my favorites growing up! Combing through Halloween candy I always coveted Butterfinger!

My local Safeway has an impressive candy aisle right smack-dab in the middle of the store. It’s hard not to take a stroll down that aisle and pick up a treat or two when you are grocery shopping! I scroll through my Safeway mobile app as I’m shopping to see what I can get a quick deal on. I’m always extra excited when I spot Butterfinger on sale! 

 

 

Butterfinger® Cookie Dough Bars

 

One of the things I’ve been missing during this pregnancy is eating cookie dough batter when I’m baking. I didn’t really think about it before pregnancy, but it’s one of my favorite parts about making cookies. I know, I know, you should NEVER eat raw dough no matter if you are pregnant or not. I am aware of all the reasons why you shouldn’t, but I am majorly guilty of snacking on raw dough during my non-pregnant life!

That’s where these Butterfinger Cookie Dough Bars come in! They are made with eggless batter and heat treated flour, making them a completely safe way to consume mass amounts of cookie dough 🙂 

I just love the little bit of crunch and deliciousness the crushed up Butterfinger adds to the creamy peanut buttery cookie dough!

How to Make Butterfinger Cookie Dough Bars

 

They are so easy to make! Start by combining butter, brown sugar and creamy peanut butter (you know the good stuff 😉 ) until smooth, then add in the vanilla extract. Whisk together the dry ingredients – the heat treated flour, powdered sugar and salt. Add that mixture to the mixer and beat until fully combined. The dough will be firm and a little flakey. 

Remove the bowl from the mixer and add in the chopped Butterfinger pieces. It’s easiest to incorporate the Butterfinger using clean hands, work them in to the dough until evenly distributed. 

Press the cookie dough into a baking pan and then transfer it to the freezer to set. Once the dough is set, melt together dark chocolate and peanut butter. Pour it over the bars and spread evenly. Sprinkle the top with more crushed Butterfinger! 

Put the bars back in the freezer for about 20 more minutes to set the topping. Once set, slice the bars and enjoy! 

The bars keep best when kept in the refrigerator or freezer!

Ingredients

Scale

Cookie Dough Bars

1 stick unsalted butter, room temperature

1/2 cup light brown sugar

1/2 cup creamy peanut butter

1 tsp vanilla extract

1/4 cup powdered sugar

1 cup flour, heat treated*

1/4 tsp salt

8 Butterfinger® Fun-Sized bars, chopped

Chocolate Peanut Butter Topping

1/2 cup dark chocolate chips

1/2 cup peanut butter

2 Butterfinger® Fun-Sized bars, chopped


Instructions

Add the butter to the bowl of your electric mixer fitted with blade attachment

Beat butter on high 1-2 minutes, using a rubber spatula scrape down the sides of the mixing bowl

Add the brown sugar and peanut butter, beat on high until smooth

Add vanilla extract, mix

In a small bowl, whisk together the powdered sugar, heat treated flour and salt

Slowly add the flour mixture to the mixing bowl and mix until well incorporated

Remove mixing bowl, add the chopped Butterfinger®

Using clean hands, fold the Butterfinger® into the cookie dough

Press cookie dough into an 8×8″ baking pan greased and lined with parchment paper. Make sure the paper hangs over the sides so it’s easy to lift out.

Place in the freezer to set, about 20 minutes

Once cookie dough bars are set, melt together the dark chocolate and peanut butter in the microwave in 30 second intervals until smooth

Pour over the cookie dough bars and spread in an even layer

Sprinkle with the chopped Butterfinger®

Place back in the freezer for 20 minutes to set the topping

Slice and enjoy!**

Notes

*Raw flour can make you sick, heat treat it before adding to no-bake. Spread the flour onto a parchment lined baking sheet, bake for 5 minutes at 350°F, cool completely before using.

**Bars keep best when kept refrigerated
