What’s a blondie?

 

Soft, chewy, buttery (or in this case, peanut buttery ;)) goodness. Blondies are the cute younger sister of brownies. Brownies are all ready established and loved by all, but blondies are still trying to figure out their place in the world, but doing it in their own way.

Blondies, as the name suggests are light yellowish brown or BLOND in color. The stark difference between a blondie and brownie is that blondies do not have any chocolate (cocoa or otherwise) in their batter. They instead use brown sugar and butter to achieve a rich vanilla flavor as opposed to a decadent chocolate one.

Why Peanut Butter S’mores?

 

In recent years people have gone a little S’mores crazy don’t you think!? I love it, when it comes to food I’m all about new, exciting, different flavor combinations. You name an ingredient and you could probably find a way to sneak it into a s’more. But even before all of the crazy ideas started pouring out, peanut butter was always a staple for taking your s’more to the next level.

In a classic S’more there are 2 really easy ways to incorporate peanut butter. The first is to spread a layer of peanut butter on the graham crackers before assembling the s’more (omg drooling!). The second is to replace your square of chocolate with a Reese’s Peanut Butter Cup – haven’t tried it… GO DO IT NOW!

If you really break it down it makes perfect sense to add peanut butter to your s’more. Peanut butter is a classic companion to the 3 elements of a s’more – graham crackers, chocolate and marshmallow (I’m looking at you, Fluffernutter!). That is why I’ve added it here to these Peanut Butter S’mores Blondies!

Tips for making Peanut Butter S’more Blondies

 

This recipe is really not complicated. The blondies are straight forward with a few tips:

  1. Use room temperature butter, peanut butter and eggs for a smooth, creamy texture
  2. We use 1 whole egg and then 2 yolks, the egg white adds fluffiness to baked goods that we don’t want in our blondies
  3. Go a little crazy with the toppings – these blondies are a fun dessert meant for overindulgence!
  4. In the oven the marshmallows will turn golden brown, if you like a charred marshmallow don’t be afraid to use your kitchen torch to get them the way you like them!
  5. Because of the sticky marshmallows these blondies can be difficult to cut, follow the instructions and cool them in the fridge before attempting to slice them!

Description

These Peanut Butter S’mores Blondies have a decadent base of perfectly gooey peanut butter blondie, stuffed with graham cracker and topped with s’more toppings – toasted mini marshmallows, milk chocolate and crushed graham crackers. 


Ingredients

Scale

1/2 cup unsalted butter, room temperature

2/3 cup creamy peanut butter

1 cup light brown sugar

1/2 cup white sugar

1 large egg + 2 large egg yolks

1 tsp vanilla extract

1 cup white all-purpose flour

1/2 tsp baking soda

1/4 tsp salt

3 sheets honey graham crackers, divided

3 full size Milk Chocolate Hershey Bars, divided

1 1/2 cups mini marshmallows


Instructions

Preheat oven to 350°F

Add the butter and peanut butter to the bowl of an electric mixer fitted with blade attachment

Cream together the butter and peanut butter on high

Add the sugars, beat until fluffy

Add the egg and eggs yolks 1 at a time, mix

Mix in the vanilla extract

In a small bowl whisk together the flour, baking soda and salt

Add the dry mixture to the wet ingredients, mix until combined

Prepare a 8″ X 8″ baking pan, grease the bottom and the sides with baking spray

Spoon half of the blondie batter into the baking pan, smooth into an even layer

Crush up half of the graham crackers, sprinkle over the batter

Spoon the remaining batter on top of the graham crackers, smooth into an even layer

Place the pan in the oven to bake for 20 minutes

After 20 minutes, remove the pan and top the blondies with the squares of 2 of the Hershey Bars and then the mini marshmallows

Return the pan to the oven for 5 more minutes of baking

Remove the pan from the oven, the marshmallows should have begun to brown, if you like them to be more toasted you can use a kitchen torch to lightly toast the marshmallows

Place the squares of the remaining Hershey Bar on top of the marshmallows and then sprinkle with the remaining graham cracker

Allow the blondies to cool completely and then refrigerate them for at least 2 hours and up to 24 hours before slicing*

Notes

*The toppings, especially the marshmallows make the blondies tough to slice, use a sharp knife. If you are having trouble, dip the knife into warm water before slicing.
