The secret to the best tacos is in the layers. Think about your favorite tacos, I’d be willing to bet that they center around some sort of protein or hearty vegetable that sits on top of a delicious sauce and is topped off with a fresh salsa or slaw.

These Fish Tacos with Mango Watermelon Salsa have the 3 key layers to make a perfect taco – Creamy Avocado Cilantro Sauce (the sauce), Blackened Cod (the protein) and Mango Watermelon Salsa (the salsa).

Creamy Avocado Cilantro Sauce

Let’s start with the sauce. It will be the base of the taco, generously spread on the tortilla. It has a creamy texture from the avocado and greek yogurt and it’s flavor is bold and cool which stands up nicely against the blackened cod. Not only is it delicious, it also helps to hold our other toppings in place.

To make it, we’ll toss all the ingredients into the food processor and blend on high until smooth!

Blackened Cod

The blackened cod is our protein and the star ingredient – they are fish tacos after all. Whatever protein or vegetable you are putting it your taco you want to make sure it is flavorful and can stand up to the sauce and salsa you are complimenting it with. In this case we are heavily seasoning and pan frying the cod to make it burst with flavor.

Rub the cod with a mixture of:

Chili Powder

Smoked Paprika

Cumin

Coriander

Cayenne Pepper

Salt

Then pan fry it in olive oil.

Cod is delicate, it’s ok if some of the pieces break up while you pan fry it, you will be cutting it into smaller pieces for the tacos anyway.

Layer 4-5 pieces of blackened cod on top of the creamy avocado cilantro sauce on the tortilla.

Now it’s time to top it off with a fresh salsa to complete your perfect taco! The salsa is the finishing touch that takes the taco from good to great. This Mango Watermelon Salsa is light, fresh and adds some sweet flavor and much needed texture.

Ingredients

Blackened Cod

1 pound cod

2 tsp chili powder

2 tsp smoked paprika

1 tsp cumin

1 tsp coriander

1/4 tsp cayenne pepper*

1/4 tsp salt

3 tbsp olive oil

Mango Watermelon Salsa

1 cup watermelon, chopped small

1/2 cup mango, chopped small

1/2 cup black beans, drained

1 tbsp jalapeño pepper, minced

2 tbsp red onion, minced

1 tbsp lime juice

Zest of 1 lime

1 tbsp olive oil

salt

Creamy Avocado Cilantro Sauce

1 large avocado**

1/3 cup plain greek yogurt

1/2 cup fresh cilantro

1 clove garlic

1 tbsp lime juice

salt

coriander

6 corn or flour tortillas***

Mango Watermelon Salsa

1/2 cup queso fresco

fresh radish

cilantro


Instructions

Blacked Cod

Pat cod dry and cut into pieces that will easily fit in your frying pan

In a small bowl combine all the spices to make a rub

Rub spice mixture on the cod to coat in a thin layer

Heat the olive oil in a large frying pan over medium heat

Add the cod, cook for 3-5 minutes on each side to brown the exterior and cook the fish through

Remove cod from the skillet and set aside on a plate lined with paper towel to soak up any excess oil

Cut cod into 1-2 inch pieces and set aside for the tacos

Mango Watermelon Salsa

Add the watermelon, mango, black beans, jalapeño and red onion to a medium sized bowl, toss

Add the lime juice, lime zest and olive oil, toss to coat

Season with salt and coriander to taste, set aside

Creamy Avocado Cilantro Sauce

Add the avocado and greek yogurt to the bowl of your food processor

Process on high until smooth

Add the cilantro and garlic, process on high until smooth

Add the lime juice, pulse to combine

Season with salt and coriander to taste

Taco Assembly

Spread a thick layer of creamy avocado cilantro sauce on a tortilla

Top with 4-5 pieces of the blackened cod

Add a heaping spoonful of the mango watermelon salsa onto of the cod

Sprinkle with queso fresco

Garnish with fresh radish and cilantro

Repeat with remaining tortillas

*adjust depending on heat tolerance

**or 2 small

***char your tortillas for extra flavor, I do it on my grill pan, you could also do it on an outdoor grill
