With a baby whose witching hour falls right around dinner time I am more thankful than ever for easy dinner recipes! Sheet Pan Dinners are where it’s at, they are easy to make and even easier to clean up, making dinner time a breeze. These Sheet Pan BBQ Chicken Quesadillas are a fun and easy dinner made with just 5 ingredients – shredded chicken, red onions, cheddar cheese and of course BBQ sauce all mixed together and sandwiched between a flour tortilla!

How to Make Sheet Pan BBQ Chicken Quesadillas

 

It’s simple! In a large bowl, mix together the shredded chicken, red onion, cheddar cheese and BBQ sauce. Lay 3 large flour tortillas on a clean, flat surface. Spoon 1/3 of the chicken mixture onto half of each tortilla (see photo above) and sprinkle with some more cheddar cheese. Fold the empty half of the tortilla over the chicken and cheese so the tortilla looks like a half moon. Prepare a large baking sheet by spraying it throughly with olive oil spray (or lining it with parchment paper). Place the 3 filled tortillas on the baking sheet, make sure they are laying flat and not touching each other. Spray the tops of the tortillas generously with olive oil spray. Slide the baking sheet into the oven and bake for 15 minutes at 375°F. If you would like the tops of the tortillas slightly more browned/crispy, switch the oven. to broil for 1 more minute. Make sure you keep an eye on the tortillas so they do not burn under the broiler.

Remove the tray from the oven and allow the quesadillas to cool for 2-3 minutes. Carefully transfer them to a cutting board. Using a serrated knife slice each quesadilla into 3 slices. Serve immediately on their own or with ranch dressing, guacamole, sour cream or desired dipping sauce.

Tips for Making Sheet Pan Quesadillas 

 

Baking quesadillas on a sheet pan in the oven is easier and quicker than making them in a pan on the stove top! Plus they are all ready at once rather than having to turn them out one at a time. 

You can make as many or as few as quesadillas as you like. This recipe can easily be cut in half or doubled depending on how many mouths you have to feed. 

This recipe can also be made with small flour tortillas (the ones that are meant for tacos) rather than the larger ones (the ones that are meant for burritos). If you make them with the taco sized tortillas, follow all the same steps, just divide the chicken mixture and cheese up between 6 of the smaller tortillas, then you can serve them whole or slice them into 2 smaller pieces.

These Sheet Pan BBQ Chicken Quesadillas are a fun and easy dinner idea made with only 5 ingredients and baked in the oven for just 15 minutes! 


Ingredients

Scale

2 1/2 cups shredded chicken (about 1 pound)

1/2 cup chopped red onions

2 1/2 cup shredded cheddar cheese, divided

1 1/3 cup BBQ sauce

3 large flour tortillas

olive oil spray


Instructions

Preheat oven to 375°F

In a large bowl, mix together the shredded chicken, red onions, 1 cup cheddar cheese and the BBQ sauce

Lay the tortillas out flat and spoon 1/3 of the chicken mixture onto half of each tortilla, top each with 1/2 cup cheddar cheese

Fold the empty half of each tortilla over so it covers the chicken mixture and cheese

Throughly spray a large baking sheet with olive oil spray

Arrange the 3 tortillas on the baking sheet so they are not touching each other

Spray the tops of the tortillas generously with olive oil spray

Place tray in the oven and bake for 15 minutes

Broil for 1 minute to crisp top of tortilla (optional)*

Remove from oven and allow to cool 2-3 minutes

Slice each quesadilla into 3 pieces

Serve warm on their own or with ranch dressing, guacamole, sour cream or desired dipping sauce.

Notes

*Be careful not to let them burn
