Taco Tuesday is getting pretty serious around here. Now sometimes “Taco Tuesday” might be “Taco Sunday” or “Taco Friday”, but the idea that we eat tacos at least once a week is real. These Slow Cooker Honey Pork Tacos with Pomegranate Slaw are at the top of our taco rotation right now!

There are so many options with tacos it makes it so easy to repurpose leftovers and make them feel like a whole new meal. That is how these tacos were born! From a bowl of leftover slow cooker honey pork came these delicious tacos and voila another meal that was very different than the bowl of pork and rice we had the night before.

My love for tacos stems from my love for all sauces and condiments. The taco toppings are just as important to me as the meat or base of the taco. These tacos start with a smear of sour cream, topped with the honey pork and finished off with a generous helping of pomegranate slaw. I love the way the cool, fresh flavor of the slaw pairs with the richness of the honey pork.

Since the slow cooker does most of the work on the pork you can set it and forget it in the morning and come home to an easy taco dinner! It’s also great for a crowd and is easy on you as the host since the slaw should be prepped ahead of time – fiesta, fiesta!

Side Note for my fellow This Is Us fans : I made these tacos before getting fully caught up on Season 2 (we actually binge watched both seasons over the past few weeks, ha), and now I will never look at them the same, may be time to upgrade to the Instapot!
