March food trends have us thinking about 2 things – all the green foods and potatoes! How did potatoes get so lucky? Baked, mashed, fried – is there a bad way to eat a potato?!

These  Instant Pot Garlic Parmesan Mashed Potatoes will knock the socks off any lucky leprechaun that can get their hands on them 🙂

How to make Garlic Parmesan Mashed Potatoes in the Instant Pot:

 

Garlic Parmesan Mashed Potatoes in the Instant Pot is so easy! We will use 2 modes on the Instant Pot, first the “Pressure Cook” to cook the potatoes and then the “Sauté” to cook the shallot and garlic.

You start with just 3 ingredients – potatoes, salt and water. Turn the Instant Pot on pressure cook mode high and cook for 8 minutes. In just this short amount of time the potatoes will be soft and ready for mashing. For this recipe we use red potatoes with the skin on which adds nice texture. Once you drain the potatoes, you’ll switch the Instant Pot to sauté mode high. Add butter, once it’s melted, add a finely chopped shallot and then 6 cloves of crushed garlic, sauté until golden brown.

At this point, you will switch the Instant Pot off and add the potatoes back to the pot. Next, add in the milk, cream, sour cream and some more butter. Mix with a wooden spoon, the potatoes will be very soft and will break down enough for chunky potatoes just by mixing with the wooden spoon. Finally, you will add the parmesan cheese and spices to the potatoes and mix thoroughly. They are now ready for serving!

Mashed Potatoes – Chunky or Smooth?

 

This recipe is intended for chunky mashed potatoes. Since we leave the skin on the red potatoes, leaving some small chunks of potato results in a nice texture. To achieve a chunky mashed potato we just simply mix with a wooden spoon. If you prefer a smoother, whipped texture for your mashed potatoes you can use a hand mixer to get them smooth. Just be careful that you do not over-whip as the texture could turn gummy.

Ingredients

2lbs red potatoes

water to cover potatoes (about 4 cups)

3 tsp salt, divided

4 tbsp butter, divided

1 shallot, chopped

6 cloves garlic, crushed

1/2 cup whole milk

1/4 cup heavy cream

1/4 cup sour cream

1 cup shredded parmesan cheese

1/2 tsp oregano

1/2 tsp garlic salt

dash of black pepper


Instructions

Wash and dry potatoes

Dice potatoes into small chunks, leave skin on

Add potatoes to the pot of your Instant Pot

Cover with water and add 2 tsp salt, mix

Set Instant Pot to “Pressure Cook” high for 8 minutes

Lock top into place and switch pressure release valve to “sealing”

When the pressure cooking is done allow the pressure to natural release for 5 minutes, then switch the valve to “venting” to release any remaining pressure

When it’s safe to do so unlock and remove lid

Drain potatoes into a colander, set aside

Return pot to cooker and switch to “Sauté” mode high

Add 2 tbsp of butter, melt

Add the shallot, using a wooden spoon sauté for 2-3 minutes

Add the garlic, sauté another 1-2 minutes

Turn Instant Pot off

Add potatoes back to pot

Still working with your wooden spoon, add 2 tbsp butter, whole milk, heavy cream and sour cream

Mix vigorously, potatoes will break down and “mash”

At this point the potatoes will still have some chunks, that is what is intended for this recipe, but if you want them smooth use a hand masher or hand held mixer to whip* them smooth (optional step)

Add the parmesan cheese, 1 tsp salt, oregano, garlic salt and pepper, mix to combine

Serve immediately


Notes

*be careful not to over-whip or potatoes may turn gummy in texture
