Sweet potato fries are just better than normal fries. It’s a fact, validated by always having to pay extra $$$ to sub them for regular fries when eating out. Why do they always do that?

Lucky for you, with this recipe you can make them at home!

Using a pound of sweet potatoes, “rough peel” them. By that I mean, peel off about half of the skin off each potato. I like to leave on some skin for extra texture. Then slice them into long skinny fries. The fries will be varying sizes depending on the size and shape of each sweet potato and that is fine!

Once they are all cut into fries, put them in a gallon-sized ziplock bag and toss them with coconut oil, cumin, coriander and dried cilantro. Bake until crispy and then sprinkle with sea salt.

While the fries are baking making the Honey Harissa Dipping Sauce – because what are fries without their dipping sauce? … potatoes, just potatoes…

The sauce is really easy to make! Mix harissa pasta, honey, lemon juice, crushed garlic and a little salt into plain greek yogurt. The sauce is a little sweet with a lot of spice which pair perfectly with the sweet potatoes!

For best results serve the fries hot, immediately out of the oven and the dipping sauce cold!

Ingredients

Sweet Potato Fries

1lbs sweet potatoes

2 tbsp coconut oil, melted

1/4 tsp cumin

1/2 tsp coriander

1/2 tsp cilantro, dried

1 tsp sea salt

Honey Harissa Dipping Sauce

1/2 cup plain greek yogurt

1 tbsp harissa paste

1 clove garlic, crushed

1 tbsp honey

1 tsp lemon juice

1/2 tsp sea salt


Instructions

Sweet Potato Fries

Preheat oven to 450°F

Rough peel the sweet potatoes*

Slice sweet potatoes into long thin fries**

Add the fries to a gallon sized plastic bag, pour the coconut oil over the fries

Add the cumin, coriander and cilantro to the bag, close the bag and shake to coat the fries

Spray a large baking sheet with cooking spray

Spread the fries onto the baking sheet, sprinkle with sea salt

Put fries into the oven to bake for 30-35 minutes***

Honey Harissa Dipping Sauce

In a small bowl mix together all of the ingredients

Serve cold with the fries for dipping

Notes

*peel of about 1/2 of the potato skin, leave some on the fries

**They won’t all be the same size, depends on the shape and size of the sweet potato

***Leave the tray on the bottom shelf for the first 20-25 minutes, at that point if they are not crispy enough, move them to the top shelf for the next 5-10 minutes
