Welcome to week 2 of the Thai Cooking At Home series! Today I’m sharing one of my favorite Thai noodle dishes – Pad See Ew! Pad See Ew is a Thai stir fried noodles dish, it’s a popular street food in Thailand because it is loved by many and it’s easy to make quickly in a hot wok.

What Do I Need to Make Pad See Ew?

 

A Wok – You don’t need much in the way of equipment, the whole dish can be made in a large wok. The dish is easiest to handle and comes out best when made in a wok. If you do not have a wok, you can also use a large skillet.

 

Wide Rice Noodles – Traditional Pad See Ew uses a very wide rice noodle called Sen Yai. These noodles are very difficult to find in the US, even in an Asian or International grocery store. I use extra wide dried rice noodles for this recipe, you could also use Pad Thai noodles, which are easy to find at most standard grocery stores. Dried rice noodles will need to be soaked in warm water before frying in the wok, you can also use fresh rice noodles if you can find them.

 

Sauce – The sauce is a thick, sweet, brown sauce made from oyster sauce, dark soy sauce and brown sugar. Pad See Ew and Pad Thai are mild noodle dishes with little spice, that probably contributes to them being so popular in the US. Of course you can also tweak the recipe to add some spice if you wish, but if you follow this recipe your Pad See Ew will be a sweet, noodle stir-fry!

 

Chinese Broccoli – Pad See Ew is simple and predictable. It’s almost always made with Chinese Broccoli, a hearty green vegetable that adds a nice texture and flavor to the dish. It’s also easy to eat with chopsticks which is important in a street food.

 

Protein – Pad See Ew is usually served with a protein. Here I am using beef, but it is often made with chicken or shrimp.

 

Eggs – As with any good stir-fry, quick scrambled eggs are added at the end. The eggs add extra flavor and protein and help bind the dish together.

Tips for Making Pad See Ew at Home

 

The key to great Pad See Ew is getting the noodles just right, here are some tips for getting perfect Pad See Ew noodles:

  1. Don’t soak the noodles in advance, you want to fry the rice noodles fresh otherwise they will break easily.
  2. Follow the instructions and cook the noodles in an empty wok so they can quickly and easily be coated and fried in the sauce.
  3. Don’t over toss, the noodles are fragile and you don’t want them breaking into small pieces.

Description

Ingredients

Scale

Noodles

8oz rice noodles – extra large

Sauce

1/2 cup oyster sauce

2 tbsp dark soy sauce

2 tbsp light brown sugar

Stir Fry

3 tbsp peanut oil

6 stalks Chinese Broccoli

3 large cloves garlic, crushed

salt

8oz skirt steak, sliced thin (about 1/4″ thick)

2 large eggs

Optional Garnish

sesame seeds

green onion

lime slices


Instructions

Noodles

Soak the rice noodles in warm water*

Sauce

Combine the sauce ingredients in a small bowl

Whisk vigorously until the sugar is dissolved, set sauce aside

Stir Fry

Heat oil in a large, heavy bottomed wok** over medium-high heat

Trim the bottoms off the Chinese Broccoli stalks and slice them in half vertically

Add the broccoli to the skillet, working with a wooden spoon sauté about 3 minutes until the broccoli leaves start to wilt

Add the garlic and a pinch of salt, sauté 1 more minutes

Add the beef, sauté about 3 minutes

Using tongs, carefully remove the broccoli and beef from the wok and set aside

Add the noodles to the skillet

Pour the sauce over the noodles

Using tongs carefully toss the noodles so they are evenly coated in the sauce

Using a wooden spoon, press the noodles to one side of the wok to open up a little space on the bottom to cook the eggs

Crack the eggs into the wok and use a fork to quickly scramble

Carefully toss the egg in with the noodles

Add the broccoli and beef back to the wok, toss to incorporate, cook 2 more minutes

Serve hot with a sprinkle of sesame seeds, green onion and a slice of lime

Notes

*Check package for instructions on how long to soak. You may also use fresh rice noodles.

**It’s easiest in a wok, but if you don’t have one you can use a large skillet instead
