This Coconut Lime Jasmine Rice will be showing up in a lot of the Thai recipes I share over the next few weeks! It’s my go-to rice to pair with curries because it’s sweet, sour, nutty flavors pair well with spicy Thai dishes.
What is Jasmine Rice?
Jasmine rice is a long-grained rice grown in Southeast Asia that is prominent in Thai cooking. It has a nutty aroma and a starchy texture. The starch makes it a sticky rice, which is great for eating with chopsticks and soaking up curries.
How to Make Coconut Lime Jasmine Rice
This rice comes together in just about 30 minutes. Start by rinsing the rice, then add it to a heavy bottomed sauce pan. Pour in one part water and one part coconut milk, you’ll cook the rice in coconut milk to give it a subtle coconut flavor. Season with salt and then bring to a rapid boil. Reduce the heat to a low simmer and cover for 20 minutes. When the rice is done, fluff it with a fork and add lime juice, zest and ground coriander. Serve the rice warm as a side dish. Garnish with fresh cilantro right before serving.

2 cups white Jasmine rice
1 1/2 cup water
1 1/2 cup coconut milk
1 tsp salt
2 tsp lime zest
2 tbsp lime juice
1/2 tsp ground coriander
2 tbsp fresh cilantro, chopped small
Rinse rice with cold water
Add rice to a heavy bottomed sauce pan
Pour in water and coconut milk
Add salt, stir with a wooden spoon
Bring to a boil over medium heat
Reduce to a simmer, cover for 20 minutes
Fluff rice with a fork
Add lime zest, lime juice and coriander to rice, toss
Serve with fresh cilantro
