Fall has officially arrived and chilly mornings are moving in. I am welcoming Fall with open arms this year, I’m SO ready for cooler temperatures, cozy sweaters and all the Fall flavors! Kicking things off the best way I know how, with a pumpkin recipe! 

This Dairy Free Pumpkin Pie Oatmeal is crazy simple! Especially with so many people working and schooling remotely this year, this oatmeal is perfect because it takes just under 15 minutes to put a hot and healthy bowl of oatmeal on the table. Oh and did I mention, you only need 5 ingredients!

The 5 Ingredients you need to make Dairy Free Pumpkin Pie Oatmeal

 

Rolled Old Fashioned Oats – not the quick cook kind, you will be boiling the oatmeal and the rolled oats work best. 

Almond Milk – I leave it up to you whether you want to use sweetened or unsweetened, plain or vanilla flavored – all will work great, it just depends on your flavor preferences. (PS. if you don’t care about the oatmeal being dairy free you may use any kind of milk you please)

Pumpkin PurΓ©e – any canned pumpkin will work, or if you are super ambitious and you make your own homemade pumpkin purΓ©e that will work too πŸ™‚ 

Maple Syrup – this is just to sweeten the oatmeal, depending on your preferences you may want to use a little more or a little less than the 3 tablespoons the recipe calls for. 

Pumpkin Pie Spice – add this for flavor to transform your oatmeal from plain old pumpkin to pumpkin pie πŸ™‚

How to Make Pumpkin Pie Oatmeal

 

This oatmeal is made quickly on the stovetop. Using a small sauce pan, add all the ingredients and mix them together. Over medium-high heat bring the oatmeal to a boil and cook while stirring consistently for about 5 minutes. The oatmeal will thicken and that is how you will know it’s ready! That’s it – easy peasy!

Once the oatmeal is ready it’s time for the fun part – dressing it up! 

There are so many toppings that can work with this oatmeal, some that I recommend are almonds, pecans, pumpkin seeds and chia seeds. If you prefer your oatmeal plain that is cool too, this recipe is very adaptable to your own tastes and preferences πŸ™‚ 

This recipe is for 1 serving, but you can easily double it if you need to feed more than 1.

Ingredients

Scale

Oatmeal

1/2 cup rolled old fashioned oats

1 cup almond milk

1/3 cup pumpkin puree

1 tsp pumpkin pie spice

3 tbsp maple syrup

Optional Toppings

almonds

pecans

chia seeds

pumpkin seeds

almond milk


Instructions

Mix all the ingredients in a small sauce pan

Put the pan on the stovetop over medium-high heat and bring to a boil

Stir until the oatmeal thickens, about 5 minutes

Top with desired toppings and a splash of almond milk

Enjoy warm
