3 years ago, almost to the day, we were galavanting around Italy, taking in the sights and eating all of the delicious Italian things (ie. pizza, pasta and gelato every day)! Given the current climate and our inability to travel, I am so grateful for these memories and I find myself traveling back there in my mind often.

Since traveling, especially internationally, is on the back burner these days, making foods that can help us travel back and reminisce on those good ol’ days is a must! One of my most favorite things we did when we were visiting Florence was take a food tour! We traveled around the city with a guide who brought us to different local restaurants and shops to sample food while learning about the history. We tried lots of things we never would have discovered on our own!

The last stop on the tour was a food market, and the last food we got to sample was an Italian Tomato Bread Soup! None of us had ever had it before and we fell in love after one bite! Add bread to anything and it immediately improves for the better, right!?

What you need to make Italian Tomato Bread Soup

 

Italian Tomato Bread Soup, aka “Pappa al Pomodoro” in Italian is a popular Tuscan delicacy. It’s a tomato-based soup that is simmered with toasted bread until it all dissolves together into a delicious soup!

In this recipe we are using 3 Mutti® tomato products – Mutti® Finely Chopped Tomatoes, Mutti® Double Concentrated Tomato Paste and Mutti® Tomato Puree. All of these products can be easily found with the other tomato products at your local Safeway store.

Mutti® Double Concentrated Tomato Paste – Made with the highest quality tomatoes, its rich and intense flavor is infused into the soup base.

Mutti® Tomato Puree – Its smooth, velvety texture and naturally sweet flavor makes it perfect for soups! 

The tomato products combine with garlic, spices and vegetable broth to make the soup base. To that, we add toasted baguette which gets dissolved and broken down in the soup, giving it texture and evening out the flavors.

How to Serve Italian Tomato Bread Soup 

 

This soup is best served warm. However, in the summertime you could enjoy it cold, similar to how you would eat a gazpacho. 

Assuming you are eating it warm, I suggest topping it was a little fresh basil, a drizzle of olive oil and a generous amount of shredded Parmigiano Reggiano!

Description

Ingredients

Soup

1 baguette*, Italian or French

3 tbsp olive oil, divided

6 large cloves garlic, crushed

1 tbsp Mutti® Double Concentrated Tomato Paste

4 cups vegetable broth, divided

1 14oz can Mutti® Finely Chopped Tomatoes

2 cups Mutti® Tomato Puree

1 tsp dried oregano

1 tsp onion powder

1/2 tsp salt

dash of black pepper

Optional Toppings

fresh basil

olive oil

shredded Parmigiano Reggiano


Instructions

Soup

Preheat oven to 400°F

Slice the baguette in half down the center and brush lightly with 1 tbsp olive oil

Place the bread on a baking sheet

Toast in the oven for 10 minutes on the middle rack, be careful it just toasts and does not burn

Set toasted bread aside

Heat 2 tbsp olive oil in a large soup pan over medium heat

Add the garlic

Working with a wooden spoon sauté the garlic until golden brown

Add the tomato paste, mix with the garlic

Slowly pour in 3 cups of the vegetable broth, whisking to dissolve the tomato paste

Add the can of finely chopped tomatoes and 2 cups tomato puree, mix

Season with the oregano, onion powder, salt and pepper, mix

Bring the soup to a slow boil

While the soup is coming to a boil, slice the toasted bread into small pieces

Once the soup boils, add the bread

Reduce heat to low

Use your wooden spoon to submerge the bread and make sure it is all covered in the soup

Simmer for 30-40 minutes, stirring every 10 minutes or so

As the soup simmers the bread will break down, if you have any large chunks left, use your spoon to help it bread apart

Add up to 1 more cup of vegetable broth to make the soup your desired consistency**

Serve the soup warm and top with fresh basil, a splash of olive oil and shredded Parmigiano Reggiano if desired

Notes

*Bread should be at least day old, stale works best

**The bread makes the soup thick, depending on your preference you may want to add more broth to make it more of a soup-like consistency
