Funfetti Rice Krispies Treat Ice Cream Sandwich Pops, because life is better with sprinkles šŸ˜‰ These have summer written all over them! Just looking at them makes me happy. I mean, Rice Krispies Treats, ice cream and sprinkles!?! How can you go wrong!?

I started dreaming about Rice Krispies Treats Ice Cream Sandwiches in the dead of winter… don’t ask me why… I guess I was just dreaming of brighter, sunnier days! But I scribbled down the idea in January or February and here we are in July, an appropriate time to share this fabulously delicious creation!

My best advice for these treat pops is don’t be afraid to get a little MESSY! When you are dealing with marshmallow and ice cream, things can get a little sticky and dripping, but that is what makes it FUN!

They are fun to make and even more fun to eat šŸ™‚ If you have little kids this could make for an exciting afternoon adventure and I’m sure they would be happy to dive in, get a little sticky and help! There are a lot of steps along the way they can help with like stiring the sprinkles into the Rice Krispies Treats or dipping the pops into white chocolate!

How to Make Funfetti Rice Krispies Treat Ice Cream Sandwich Pops

Start by prepping the Rice Krispies Treats, melt the butter and marshmallows together on the stove top. Next mix in the Rice Krispies.

Wait about 5 minutes to let the Rice Krispies Treats cool off a bit before adding the sprinkles. We don’t want the sprinkles to melt, but don’t wait too long that the Rice Krispies Treats start to harden!

Once the sprinkles are mixed in press half of the mixture into a greased baking pan in an even layer. Spray your hands with a little cooking spray to help with this step so your hands don’t stick to the Rice Krispies Treats!

Next comes the ice cream layer. You’ll want to take your ice cream out a few minutes before you need to use it. You won’t be able to spread the ice cream if it is too frozen, but you also don’t want a melty mess so make sure you don’t take it out too early!  Spread the ice cream in an even layer about 1/2″ thick.

Top the ice cream with the remaining Rice Krispies Treat. This is the harder part, but luckily the Rice Krispies Treat is very malleable and forgiving so just keep pressing and it will come together!

Into the freezer it goes! You need the ice cream sandwich brick to set and freezer completely before trying to slice them into bars, this will take at least 2 hours.

When it’s set, take it out of the freezer and flip it onto a large cutting board. It should pop out, but if it doesn’t you can use a butter knife to help loosen up the slides and help it along. Use a good knife to slice it into bars. For larger pops, like the ones pictured here, slice it into 9 bars, for smaller pops slice it into 12. Press a cake pop or popsicle stick into each bar.

Back into the freezer they go! This time they are still pretty frozen so they just need about 30 minutes to reset.

Right before you take them out of the freezer, melt the white chocolate and coconut oil together. We use the coconut oil because it acts like magic shell to help the white chocolate harden.

Dip each pop into the white chocolate and then sprinkle with sprinkles to decorate! The white chocolate hardens fast because the pops are so cold, so make sure you are working quickly with the sprinkles!

Store them in the freezer until right before you are ready to enjoy!

Funfetti Rice Krispies Treat Ice Cream Sandwich Pops

Ingredients

Scale

1 stick unsalted butter

1 10oz bag mini marshmallows

1/4 tsp salt

5 cups Rice Krispies

1/2 cup sprinkles, divided

9 cake pop or popsicle sticks

1 1/2 cups white chocolate chips

1 tbsp coconut oil


Instructions

Melt butter in a large pot over medium heat

Add the marshmallows, stir with a wooden spoon until the marshmallows melt

Stir in the salt

Remove pot from heat

Pour in the Rice Krispies, mix to full coat

Let cool for 5 minutes

Add the sprinkles, mix

Spray an 8X8″ baking pan throughly with cooking spray

Spray your clean hands with cooking spray*

Press half of the Rice Krispies Treat Mixture into the baking pan in an even layer that covers the whole bottom of the pan

Scoop the ice cream** on top and then smooth it out into an even layer about 1/2″ thick

Carefully press the remaining Rice Krispie treat mixture on top of the ice cream in an even layer

Put pan in the freezer and freeze for at least 2 hours

Remove pan and flip it onto a large cutting board

Carefully pop the Rice Krispies treat ice cream sandwich block out of the pan

Using a good knife, slice the block into 9 even bars***

Press a cake pop or popsicle stick into the bottom of each bar

Line a baking sheet with parchment paper

Lay the bars flat on the baking sheet

Place baking sheet in freezer for at least 30 minutes

Right before removing the pops for the freezer, melt the white chocolate chips and coconut oil together (either in the microwave or in a double boiler)

Remove the pops from the freezer

Working quickly dip each pop into the white chocolate to coat half way and then sprinkle with sprinkles

Keep pops in the freezer until you are ready to enjoy

 

Notes

*do this so your hands don’t stick to the Rice Krispies treat mixture

**ice cream should be solid, but not rock hard so you are able to spread it

***for smaller bars slice into 12
