I always forget how much I love lettuce wraps until I make them again.  They are a light dish, but also so satisfying! They can stand alone as a full meal or are easily served as an appetizer!

These Clementine Chicken Lettuce Wraps are made by infusing the ground chicken with the zest and juice of my favorite Darling Clementines®! The flavor is amazing and I can’t get enough of that fresh crunch when I bite into one of these lettuce wraps!

What kind of lettuce is best for lettuce wraps? 

 

Here I have made the lettuce wraps with romaine lettuce hearts. In my opinion it’s the best choice because it is sturdy and holds the filling well, I also love how crunchy it is. But you could really use any green leafy lettuce, it just needs to be large enough to serve as a boat for the filling. Boston bib lettuce is another popular choice for lettuce wraps.

How to garnish Clementine Chicken Lettuce Wraps 

 

My suggestion is to garnish these wraps with crushed peanuts and fresh cilantro. I love the crunch and complimentary flavor of the peanuts and you can never go wrong with the fresh kick of a sprinkle of chopped cilantro. 

Another option would be to garnish them with chopped green onions and a sprinkle of sesame seeds! Or maybe you want to add a sprinkle of red pepper for a little kick if you are into that! 

Want to skip the extra toppings, no problem, the chicken is so flavorful it can stand on its own!

Description

Healthy Clementine Chicken Lettuce Wraps made with ground chicken seasoned with a sweet and zesty clementine honey sauce served in a fresh lettuce wrap. 


Ingredients

Scale

1 pound ground chicken

2 cloves garlic, crushed

1/2 tsp onion powder

1/2 tsp garlic powder

1/2 tsp coriander

1/2 tsp cumin

1/4 tsp salt

dash of black pepper

4 Darling Clementines®

2 tbsp olive oil, divided

1 large yellow onion, diced

1 red bell pepper, sliced thin

2 tbsp honey

12 romaine or bib lettuce leaves

crushed peanuts and chopped fresh cilantro for garnish


Instructions

Place the ground chicken in a medium sized bowl

Add all of the ingredients through the black pepper to the bowl with the chicken

Using a zester, zest the 4 clementines and add the zest to the bowl, set aside clementines for later

With clean hands mix everything into the ground chicken until evenly distributed

Heat 1 tbsp olive oil in a large skillet over medium heat

Add the onion and red pepper, sauté 2-3 minutes

Add the ground chicken mixture to the skillet with the onions and peppers

Working with a wooden spoon, break up the chicken and cook until lightly browned and cooked through, about 5-7 minutes

In a small bowl, juice the 4 clementines

Add the honey and whisk

Pour the honey clementine mixture over the chicken in the skillet, sauté for 2 more minutes until the juice has cooked into the meat

Remove skillet from heat and allow to cool for at least 10 minutes*

Divide the chicken mixture between the 12 lettuce leaves

Serve topped with crushed peanuts and fresh cilantro

Notes

*If you put the chicken in the lettuce wrap too hot it will wilt the lettuce, you can serve the lettuce wraps with the chicken warm, at room temperature or cold
