If you have been around here a while you know that I am the queen of condiments and mustard is up there in my top 3 favs. I love all kinds of mustards, but there is something about when you add honey to mustard that makes my heart skip a beat. Like peanut butter and chocolate or apples and cinnamon – HONEY and MUSTARD are simply better together! 

The Homemade Honey Mustard Sauce used in this dish is made with 3 different types of mustard – spicy brown, dijon and yellow mustard for a complex mustard flavor that excites your palette and will have you making this dish again and again! 

Like this other one skillet chicken dish, this honey mustard chicken has received high praise in this house and has earned a spot in our dinner rotation!

Why You Should Make this dish in a Cast Iron Skillet? 

 

The number one reason you should make this dish in a cast iron skillet is because it’s easy. The dish starts off on the stove top and is finished off in the oven. All the steps are done in the skillet, from browning the chicken thighs and sautéing the onions on the stove top to baking the chicken through in the oven there is no need to ever switch pans. 

It’s also easy to brown and sauté in a cast iron skillet. A good, seasoned, skillet makes a great surface for browning chicken without sticking or burning! 

Finally, clean up is a breeze! Again, if you are working with a well seasoned skillet it should be easy to clean and of course there is the added bonus of only having 1 pan to clean!

How to Make the Honey Mustard Sauce

 

The sauce comes together easily just by whisking together the 3 kinds of mustards, honey and some seasonings. Once that is all whisked up add some chicken broth and corn starch to help the sauce thicken in the skillet. 

Once the onions, shallot and garlic are sautéd you will add them to the sauce and then pour it over the chicken thighs before it goes in the oven – so delicious! 

The sauce will coat the chicken thicken as it bakes, the onions, shallots and garlic will continue to cook adding to the flavor of the sauce!

Ingredients

Scale

2 pounds boneless, skinless chicken thighs

1/4 cup olive oil

salt

3 cups yellow onions, thinly sliced

1 shallot, diced

3 large garlic cloves, crushed

1/4 cup honey

3 tbsp spicy brown mustard

2 tbsp dijon mustard

1 tbsp yellow mustard

2 tsp ground mustard seed

1 tsp onion powder

1 tsp garlic powder

1/2 tsp salt

dash of black pepper

1 cup chicken broth

2 tbsp cold water

1 tbsp corn starch


Instructions

Preheat oven to 400°F

Pat the chicken dry and sprinkle with salt

Heat olive oil in a 12-inch cast iron skillet over medium-high heat

Add the chicken to the skillet

Cook until chicken lightly browns, about 5 minutes

Flip and brown on the other side

Remove chicken from the skillet and set aside on a plate

Add the onions and shallot, working with a wooden spoon sauté 3-4 minutes

Add the garlic, sauté about 2 more minutes

In a medium-sized bowl whisk together the honey, mustards, mustard seed, onion powder, garlic powder, salt and pepper

Pour in the chicken broth, whisk

In a small bowl, whisk together the cold water and corn starch

Pour corn starch mixture into honey mustard sauce, whisk

Spoon the onions, shallots and garlic into the honey mustard sauce

Reduce the skillet heat to low, add the chicken thighs back to the skillet

Pour the honey mustard sauce with the onions, shallots and garlic over the chicken thighs

Transfer the skillet to the oven, bake for 15-20 minutes
