These Easy No Bake Granola Bars check all the boxes. They are quick and simple to make in your food processor and harden in the refrigerator, so there is no need to turn on your oven when it’s 95 degrees out. And did I mention they are delicious? They are sweet peanut buttery deliciousness with just the right amount of dark chocolate coating 🙂

How to Make Easy No Bake Granola Bars

 

You’ll need your food processor. Start by processing the oats and flax meal, process on high until the oats are a fine consistency. To that, add in the honey and peanut butter and then turn the food processor back on full blast. Leave it to process for a few minutes.

While the food processor is working it’s magic, get out a loaf pan and line it with parchment paper. Use a large sheet of parchment paper so that it hangs over the sides of the loaf pan, you’ll use that extra paper to easily pull the granola bars out of the loaf pan once they have hardened.

Now that the granola bar batter is done and our loaf pan is set, transfer the batter into the loaf pan. Use your fingers or a measuring cup to pack the batter down tight and flat in an even layer on the bottom of the pan. Put some muscle into it!

Melt the chocolate and coconut oil and pour it into the loaf pan over the granola batter. Use a spoon to smooth it out in an even layer. Now it’s time to top it off with your favorite granola bar toppings (see more below). Once it is properly topped, pop the pan into the refrigerator for at least an hour to harden.

After an hour when the granola batter is set lift it from the pan (using the parchment paper) and slice into 1-inch wide bars. Store the bars in an airtight container in the refrigerator.

Ingredients

Scale

2 cups old fashioned oats

1 tbsp flax meal

1/4 cup honey

1/2 cup peanut butter

1/2 tsp vanilla extract

1 tbsp chia seeds

1/2 cup dark chocolate chips

1 tsp coconut oil

1/4 cup banana chips (optional)***

2 tbsp walnuts, finely chopped (optional)


Instructions

Add the oats and flax meal to the bowl of your food processor, process on high until oats are a fine consistency

Add the honey, peanut butter and vanilla extract, process on high for a 2-3 minutes

Add the chai seeds, pulse to incorporate

Line a loaf pan with parchment paper*

Press the granola bar batter into the pan**, make sure to press it firmly into the pan and smooth out the top so it’s flat

Put the chocolate chips and coconut oil into a heat safe bowl and melt over a double boiler (or on defrost in the microwave)

Pour the melted chocolate mixture over the granola bar batter, use a spoon to spread it evenly

Top with banana chips and chopped walnuts (or toppings of choice)

Put the loaf pan in the refrigerator for at least 1 hour to harden

Remove the pan from the refrigerator and use the parchment paper to easily pull the bars out

Set on a cutting board and slice into bars about 1-inch wide

Store in the refrigerator

Notes

*Use a large piece of parchment paper so you can use it to easily pull the bars out of the pan after they harden

**the granola bar batter will still be a little flakey, that is ok, press it firmly into the loaf pan and it will stick together.

  1. The banana chips are so beautiful! I would have never thought to include them but duh, crunchy, fruity, and pretty!
