Wasn’t it just 95 degrees and we were talking about ice cream and lemonade? Now it’s time for turkey, stuffing, mashed potatoes and of course PIE! These Mini Individual Pecan Pies help you keep your dessert options open 🙂

One of the Thanksgiving struggles is finding room for all the different delicious dessert options! If you are like me you want a little bit of everything! I mean how do you decide between pumpkin, apple, pecan, chocolate cream… the list goes on.

These little pecan pies are perfect for those of you wanting to have a little bit of everything, but not over-do it with 12 pies for your 10 person dinner party 🙂

Bake these little pies in these 8oz wide mouth mason jars  for perfect portions. Plus, I know some of you will hate me for this, the crust to pie ratio is spot on in my opinion. The crust is my least favorite part, I’m all about the filling!

Mini Individual Pecan Pies

Ingredients

Scale
  • 1/4 cup unsalted butter, melted
  • 1 cup dark corn syrup
  • 1/2 cup dark brown sugar
  • 3 large eggs
  • 1 tsp vanilla extract
  • 2 cups pecan pieces
  • 1/2 refrigerated pie crust
  • 1/2 cup pecan halves

Instructions

  1. Pre-heat oven to 350°F
  2. In a large bowl whisk together butter, corn syrup and brown sugar
  3. In a small bowl whisk together eggs
  4. Slowly whisk the eggs into the sugar mixture
  5. Add vanilla, mix
  6. Fold in pecan pieces
  7. Grease 4 8oz wide mouthed glass mason jars
  8. Press 1/4 of the pie crust into the bottom of each jar
  9. Fill each jar with 1/4 pie mixture
  10. Top with whole pecans
  11. *Place jars on a small baking sheet
  12. Bake for 40-45 minutes
  13. Serve warm

Notes

*Bake jars on a baking sheet in case they bubble over

Decorate jars with a twine bow for an extra touch!
