Sourdough Avocado Toast

Fulfill all of your #toasttuesday dreams with this Sourdough Avocado Toast. Thick slices of fresh sourdough topped with smashed avocado, sprouts and a perfectly poached egg, finished off with pomegranate seeds and a drizzle of honey! 

 

When avocado toast first got popular a few years back it seemed like a fad, but it doesn’t seem to be going out of style! anytime soon! I can say for certain that it will always be cool to me, it’s by far my favorite way to eat avocado (well, maybe it’s tied with guac🙂 )! This Sourdough Avocado Toast takes avocado toast to a new level! Thick slices of fresh, toasted sourdough spread with a heaping portion of smashed avocado, topped a bed of sprouts to hold a perfectly poached egg, finished off with a sprinkle of pomegranate seeds and a drizzle of honey! It’s absolutely delicious anytime of day, I’ve eaten it for breakfast, lunch and dinner (not all on the same day 😉 )

Tips for the best smashed avocado

 

When you are making smashed avocado for avocado toast you are looking for that perfect balance – you want it to be creamy enough to spread, but you don’t want it smooth like guacamole. Think about chunky peanut butter, you want it to have some small “chunks” of avocado for texture. Ideally your avocados will be at that “perfectly ripe” stage where they are not too soft and not too hard. If that is the case for you, bravo!, they are usually not easy to find! We all know that finding “perfect” avocados and keeping them perfect until you are ready to eat them can be quite the feat! So when you are preparing your smashed avocado keep in mind the texture of the avocado you are using. Use the back of a fork to “smash” the avocado until it turns into a lumpy spread.

I like to keep the smashed avocado pretty simple so that the flavor of the avocado is not over powered. I season it with lemon or lime juice, sea salt and a little bit of cilantro – the cilantro is optional if you are not a fan!

How to make a perfectly poached egg

 

I won’t pretend to be an expert on how to poach an egg, but I have done a lot of YouTube research, this is the best method I’ve found. It’s pretty simple and in my experience, the egg come out perfectly every time! Believe me, I know it can be a frustrating process, but if you follow the steps in the video I know you will have success!

I love breaking into a poached egg and having it soak my toast in runny yolk. But, if you prefer not to poach your egg, you could also use a fried egg or leave the egg out entirely – you do you!

Keep it savory

 

This toast is savory with a touch of sweet from the pomegranate seeds and drizzle of honey. I love those little pops of sweet, but if you prefer to keep your toast entirely savory I understand. I have also made it with the addition of smoked salmon and Everything but the Bagel Seasoning (from Trader Joes) and it is equally delicious!

Note: Recipe Is Per Piece of Toast

1 poached egg*

1 1-inch thick slice sourdough bread

1 tsp olive oil

1 small, ripe avocado, peeled and pitted

juice of 1/2 lemon or lime

1/4 tsp sea salt

1 tbsp fresh cilantro, chopped

1/2 cup bean or alfalfa sprouts

1 tbsp pomegranate seeds

1 tsp honey

sea salt


Instructions

Poach egg according to video instructions, set aside on a paper towel

Brush the bread with olive oil on both sides

Toast** on both sides

In a small bowl smash the avocado with a fork***

Add the lemon or lime juice, salt and cilantro****

Spread smashed avocado in a thick layer on the bread

Top with sprouts

Carefully lay the poached egg on top of the sprouts

Sprinkle with pomegranate seeds

Drizzle with honey

Sprinkle with sea salt to taste

Enjoy immediately

Notes

*Follow these instructions for perfectly poached eggs using the vortex method

**Best if grilled,  I used a grill pan on the stove top, you could also use a grill. If you can’t use a grill or grill pan, use a toaster oven or frying pan

***You don’t want it completely smooth, just smooth enough to spread, leave some larger chunks

****use more or less depending on your taste preferences
