Roasted Herb Potatoes with Garlic Dill Dipping Sauce

Happy Friday! 

Even though the snow delayed the start to the week, for whatever reason, it felt long to me, so I am more than ready for the weekend! Things are supposed to be warming up around here and I am looking forward to lots of melting and some time outside! 

I have one last blizzard inspired recipe to share with you to round out the week! This was the most delicious and the most unhealthy, but it’s the weekend and you deserve a treat, right?

The key to this recipe is slicing the potatoes very thin so they get crispy on both sides when you bake them. The secret weapon is the sauce, it’s creamy, it’s tangy, it’s darn delicious! Really the potatoes are just a vehicle to eat as much of the sauce as possible πŸ™‚ double dipping encouraged!

Roasted Herb Potatoes with Garlic Dill Dipping Sauce

Ingredients

Scale

Potatoes

  • 6 yukon gold potatoes
  • 1/2 tbs sea salt
  • 1/2 tbs black pepper
  • 1 tbs oregano
  • 1 tbs parsley
  • 2 tsp onion powder

Sauce

  • 1 cup mayonnaise
  • 1/2 cup rice wine vinegar
  • 1 clove crushed garlic
  • 2 tbs dill
  • sea salt and black pepper to taste

Instructions

Potatoes

  1. Preheat oven to 400 degrees
  2. Slice potatoes thin
  3. Toss potatoes with olive oil and spices
  4. Bake 25-30 minutes until golden brown

Sauce

  1. Whisk together mayonnaise and rice wine vinegar
  2. Mix in garlic and dill
  3. Add sea salt and black pepper to taste

I’m a week early here, but these would be an easy addition to a Superbowl Party! Sure to be a crowd pleaser πŸ™‚
