S’mores Pie

Happy 4th of July Weekend! I hope you are enjoying some time relaxing with family and friends!

When thinking about what I was going to make for a 4th of July treat s’mores immediately came to mind! What is more American than sitting by a fire and making an ooey gooey s’more of chocolaty goodness? S’mores are an easy summer treat and a staple to any summer bbq. This pie does any good s’more justice and believe me you will be asking for SOME MORE πŸ™‚

I made the same crust for this pie as I did for these key lime pie bars. It is made with just graham crackers and coconut oil. Process the graham crackers and melted coconut oil on high until crumbs are finely ground.

Press the mixture into an oiled pie pan. Bake for 10 minutes at 350 degrees until slightly browned.

While the crust is baking, warm heavy cream on low until it is just about to boil, remove from heat and pour over chocolate. Whisk until the chocolate mixture is smooth.

Pour chocolate mixture into pie crust.

Cover with marshmallows and put pie into the oven on broil for up to 1 minute, checking every 15 seconds so the marshmallows do not burn! Let the pie set for at least 2 hours before serving. (Alternatively, if you have a kitchen torch, you can set the chocolate first and then cover with marshmallows and torch right before serving.)

As a chocolate lover the most important part of a s’more to me is obviously the chocolate! Second to chocolate is the marshmallow and the graham crackers come in a pretty distant third. So, for me, the ratio of chocolate to marshmallow to graham cracker in this pie is perfection.

S’mores Pie

Ingredients

Scale
  • 16 graham crackers (2 sleeves)
  • 1/2 cup coconut oil, melted
  • 6 bars of Hershey’s Chocolate
  • 1 cup heavy cream
  • 4 cups mini-marshmallows

Instructions

  1. Preheat oven to 350 degrees
  2. In a food processor, process graham crackers with coconut oil until finely ground
  3. Press graham cracker mixture into a pie pan in an even layer
  4. Bake crust for 10 minutes until slightly browned
  5. While crust is baking, place chocolate bars in a bowl
  6. Heat heavy cream over low heat until it is about to boil
  7. Pour heavy cream over chocolate to melt, whisk until smooth
  8. Pour chocolate mixture into pie crust
  9. Cover with mini marshmallows
  10. Put oven on broil
  11. Broil pie to toast marshmallows (up to 1 minute checking every 15 seconds)
  12. Let pie set in refrigerator at least 2 hours before serving

Notes

  • You can use a kitchen torch to torch marshmallows rather than put the pie under the broiler
